The 2012 Vintners Private Reserve Merlot is a product of the warm 2012 growing season that delivered great reds for Niagara. Expertly grown and meticulously crafted; with a long, slow fermentation in stainless steel tanks with pump overs twice daily then racked into new and second fill barrels for 26 months (80% French 20% American oak barrels).
We recommend pairing alongside Tania Sheep Cheese, A beautiful Tuscan-Style Sheep’s milk cheese from Lenberg Farms made with 100% Ontario Sheep’s milk. Aged for 6 months, the cheese develops a semi-firm, smooth and slightly crumbly texture while maintaining its creamy, mellow and somewhat piquant taste with earthy undertones.
