2021 Cabernet Merlot
The 2021 Cabernet Merlot blend has strong aromas of raspberry, eucalyptus, bright red cherry, and smoke. With bright acidity to compliment the fruity characteristics, this medium-bodied red wine has subtle hints of vanilla and caramel on the finish.
Both varietals were separately cold soaked before fermentation and fermented at warm temperatures to extract optimum flavours. Pump-overs were performed twice daily to promote gentle extraction of tannin and colour from the skins. Aged in French and American Oak for up to 14 months.
